The concept avoids the "fusion for fusion’s sake" trap, instead focusing on the shared culinary DNA of Thailand’s Northeast and Japan. Under the direction of Chef Uno, the menu explores the intersecting roots of rice, fermentation, and heat.
The signature Crispy Sushi Rice Popper—a playful riff on nam khao—has quickly become a crowd favorite, alongside inventive pairings like Salmon Belly with spicy Isaan dipping sauce and Steamed Clams in Ponzu.
